15 OPE R A T IO N Ice Production T here are two distinct cycles: freeze and harvest. 1 freeze cycle + 1 harvest cycle = 1 batch of 8 cubes . T he freeze cycle happens when water is sprayed against the freezing surface . T he harvest cycle is when the ice is released and water enters the ice mak er . 16 Cleaning IMPORT ANT NOTE: Never keep anything in the ice stor- age bin that is not ice; objects lik e wine or beer bottles are not only unsanitary , but the labels may slip off and plug up the drain.
